Cretan Vegetable Soup


  • 500gr Cretan vegetable soup (semolina, beetroot, spinach, tomato)
  • 2 tablespoons tomato paste
  • 4 sprigs of chopped parsley
  • 2 minced dried onions
  • 1/2 teaspoon paprika
  • 4 tablespoons olive oil
  • 200gr dry cream cheese of Crete grated


Heat 9 glasses of water in the pot, add pulp (2 tbsp), add chopped parsley (4 cloves), 2 small dried onions, 1/2 teaspoon paprika. After they boil, add the pasta (tea cup) and boil for 15-20 minutes. At the end add 4 tbsp olive oil and grated cheese (preferably, dry cream cheese of Crete).

The Cretan vegetable soup with the variety of vegetables (beetroot – spinach – tomato) is very enjoyable and delicious. It can be either the first course at the lunch table, or a light and delicious dinner, with very high nutritional value.
