Carob Dako Bites

Salad Ingredients

  • 150gr carob dako bites (100% wholemeal flour)
  • 1 small lettuce
  • Iceberg
  • 1 bunch of arugula
  • 15-20 cherry tomatoes (cut in half)
  • 4 small cucumbers (cut into cubes)
  • 1/2 bunch of coriander or parsley
  • 1/2 avocado (cut into cubes)
  • 1 orange (cut into thin slices)
  • 1 handful of pine cones (finely chopped)

Sauce Ingredients

  • 2 waxless oranges (we keep the peel and the juice)
  • 1 tablespoon mustard
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 7-8 tablespoons olive oil
  • salt
  • freshly ground pepper


Make the sauce by mixing all the ingredients together and leave it for an hour before serving to bring out its aromas. Wash, chop and place the salad in a bowl and about 150gr of locust beans. Pour the sauce over the salad, stirring to go everywhere. Garnish with the finely chopped orange slices and roasted pine cones. And bon appetit!
